Dining at Pali Retreat

At Pali Retreat, dining is an integral part of the overall retreat experience. Our kitchen is committed to providing meals that are safe, thoughtfully prepared, and designed to bring people together around the table.

Led by Chef Robert Sevaly, our experienced culinary team approaches every meal with intention and care. Menus are designed to be well balanced and satisfying, with strict recipe adherence to ensure consistency, quality, and food safety for every group we host. Whether fueling a full day of meetings or supporting moments of reflection and connection, our dining program is designed to complement the purpose of each retreat.

Our culinary approach is guided by the Five Kitchen Sequoia Pillars, which define how we cook, source, and serve food across all Pali Retreat programs.

Scratch Cooking (Homemade)

Great meals start from scratch. Our chefs prepare meals in house using fresh, high-quality ingredients whenever possible. This allows for greater control over flavor, nutrition, and consistency, while delivering meals that feel both comforting and elevated.

Allergen Awareness

Food safety and dietary awareness are top priorities. Our team has a thorough understanding of the ingredients used in every recipe and can confidently communicate the presence of allergens, including the Top 9 Federal Allergens. Ingredient information is available upon request, and we utilize Galley to maintain accurate and up to date dietary information for our guests.

Local

We proudly source many ingredients from California farms, vendors, and business partners. Supporting local suppliers allows us to serve fresher food while building strong relationships within our surrounding communities.

Sustainable

Sustainability is an ongoing focus within our kitchen. We prioritize thoughtful menu planning, reducing food waste, responsible sourcing, and environmentally conscious practices whenever possible. These efforts help minimize our environmental impact while maintaining a high standard of quality and service.

Freshness

Freshness is non-negotiable. Our kitchen receives frequent deliveries from trusted suppliers and local partners, and every product is carefully inspected by our culinary and receiving teams before entering the kitchen. This ensures consistent quality and food safety for every group we serve.

Meals are served buffet style in Huckleberry Hall, with menus that balance comfort, variety, and flexibility. We regularly accommodate vegetarian, vegan, gluten free, halal, and other dietary needs with advance notice. Sample menus are available to help groups plan their retreat experience.
